Gluten-free Pizza Worth Eating

Here's how to make gluten-free, egg-free and dairy-free pizza that is in truth palatable even for those who do not suffer from gluten sensitivity.

The secret is Caputo Fioreglut Gluten-free Pizza Flour. A the time of writing, a kilogram of this could be purchased from Amazon here for $17. This will make a bit more than 2 pounds of pizza dough.

Note that fiore in Italian means "flower," though, unlike English, the Italian words for flour (farina) and flower are not homonyms. This is nothing more than some marketing person's idea of a product name: flower + glut[en].

Ingredients

160 g Caputo Fioreglut gluten-free flour
1 tsp yeast
1 tsp sugar
½ tsp Kosher salt
150 g warm water
1 tbsp extra virgin olive oil (plus more for handling and brushing)
pizza toppings including sauce, shredded low-moisture mozzarella cheese, etc.)

Preparation

Using a Danish whisk or a stand mixer with paddle, mix flour, yeast, sugar and salt. Slowly add water and oil to make a sticky ball of dough. Beat harder or faster to finish making the dough smooth, about 3 minutes.

Oil a bowl three times the size of the dough ball. With oiled hands, shape the dough in the bowl, cover and rest to proof until nearly double in size.

Pizza

When ready to make pizza, make a 14" round by carefully pressing the ball out into a disk on an oiled sheet of parchment paper. Lightly oil the top of the dough disk, apply sauce (sparingly or you'll soak it during the bake), spread cheese, toppings and more cheese for a traditional pizza.

Bake at 450° over a stone or make a pan pizza with it in a skillet. Discard the parchment paper as soon as baked.

Pan pizza

Pre-heat your oven's broiler and place a shelf to hold a skillet about 6"-10" below the broiler element.

For a pan pizza, spread a small amount of olive oil plus trace amounts of basil, oregano, garlic powder and salt in a 10" non-stick skillet. Using no parchment, press the dough ball into the skillet and a little bit up the sides. Brown the dough checking the underside by lifting with a silicon spatula or scraper.

When brown to your liking, brush a small amount of olive oil on the top, apply the sauce, then cheese, topping and more cheese. Place under the broiler for a few minutes.
