Teriyaki comes from teri, meaning luster or shine, and yaki meaning to grill or broil. This sauce can be used to marinate, flavor or glaze.
2 parts | soy sauce | |
2 parts | mirin | |
1 part | brown sugar | |
— | ginger | |
— | garlic | |
— | chopped scallions | |
— | sesame seeds |
Bring ingredients (except scallions, sesame seeds or other add-ons) to a boil.
To thicken as a glaze, dissolve cornstarch in small amount of cold water and stir into the sauce while hot. Stir until thick.
Brush thickened sauce on broiled chicken breast when almost arrived at end temperature on grill, in oven or in skillet. Because of the high sugar content, it cannot be used from beginning.
