This is my favorite simple quesadilla, simple and tasty. To make the guacamole, use a firm, ripe avocado with a squirt of lime and some of one one of those ready quacamole spice packets.
| 2 large | flour tortillas |
| 1 mound | of cheese |
| ⅛th cup | neutral oil |
| — | sour cream |
| — | guacamole |
| — | fine chopped ½ tomato |
| — | fine chopped ¼ white oe sweet onion |
Mix tomato and onion into guacamole.
Ina large skillet on medium hot put oil. Once hot, toast one tortilla until puffy and beginning to brown, flip and toast other side. Do not burn or over brown. Lift from skillet and drip-drain a few seconds.
Place on plate. Heap and spread cheese while toasting the other tortilla. You should have used up all the oil. Cover cheese with second tortilla.
Drop skillet temperature to medium low. Place quesadilla in skillet and cover with lid. Turn after 60 seconds and cover again. Continue to heat until cheese melted.
Cut into 8 wedges. Top with guacamole and sour cream.
Serve immediately.
