Paella shopping list
This is for the recipe which feeds probably 6. I have two paelleras
and usually feed twice that. Scale accordingly.
Broth and Sofrito
- olive oil
- head of garlic
- tomato paste
- smoky paprika
- 32 oz chicken stock
- 1 bottle clam juice (optional)
- 2/3 cup dry sherry
- saffron (optional)
- 1-1/2lb chicken thighs, boneless or with bones
- kosher salt
- fresh-ground pepper
- 1 lb large shrimp, deveined
- 1lb clams or mussels, rinsed and debearded (optional)
- 1lb chorizo (optional)
- onion, fine-diced
- roasted red peppers or bells
- 3 cups arborio rice (medium-grained rice)
- 1 cup green beans, fresh
- other vegetables like chick peas and artichokes
