Tasty Hash

The combination of flavors, sweet, salty and spicey, make one not miss the butter or garlic that might otherwise be found in such a recipe.

Ingredients

2 tbsp cooking oil
medium onion, sliced into thin wedges
1-2 lbs sausage, spiced (Italian)
bacon (optional)
2 small yams, small-diced
2 potates, medium-diced
2 squash (yellow or zucchini), coarse-diced
salt
1 tsp Kosher salt
  fresh, coarse-ground black pepper

Preparation

1. Clarify onion in very large skillet, don't brown.

2. Add in sausage until beginning to brown.

3. Cook covered until ready. Take care not to burn.
