2 small | yams, small-diced |
2 | potates, medium-diced |
2 | squash (yellow or zucchini), coarse-diced |

1. Clarify onion in very large skillet, don't brown.
2. Add in sausage until beginning to brown.
3. Cook covered until ready. Take care not to burn.
