Not real birria, I have made that before and it's a lot of work and takes all day. This is an imitation that takes maybe 10 minutes to put together if you have everything on hand.

| — | corn tortillas, yellow is best (?) |
| 1 lb | ground beef |
| — | taco seasoning |
| — ½ small can | red enchilada sauce |
| — ½ | Private Selection™ Barbacoa cooking sauce |
| — | beef (or chicken) stock |
| — | pile of cheese |
Put beef stock in a pot over low. Add barbacoa and enchilafa sauces.
Brown the beef mixing in taco seasoning, 5 minutes in a large skillet. Keep the fat! Add a little birria sauce to enhance.
Sop tortillas, one at a time, in the fat from the beef, then in the birria sauce and place down flat on griddle (or in another skillet).
Garnish each tortilla with s little pile of cheese. Add a little pile of beef over the cheese. Spoon additional birria sauce over the open taco.
Using a spatula, fold each tortilla in half and press down on griddle. After a minute, flip to other side.
Open slightly to garnish with onion, lime juice, cilantro, yet more birria sauce, sour cream (if you insist).
Sop in birria sauce as you eat.
