Achiote oil is a staple in Mexican and other Latin cuisines. I am able to purchase the seed for under $1 per package at my nearby Mexican market. I learned this watching Daisy Cooks.

Steep seeds in oil in a skillet over medium heat until sizzling. Remove from heat and let cool. Strain the seeds from the oil. The oil will keep several days on your counter in a covered container.
